Galena Food Pantry and AVC Team Up to Educate

On November 13, three Restaurant Management students traveled to the Galena Food Pantry to participate in what will hopefully become another tradition for the program. Instructor Cathy Moon had a conversation with Bob Smialek last March while delivering the corned beef for the Knights of Columbus' annual St. Patrick's Day dinner, in which the students cooked and sliced the corned beef. Bob wanted someone to show the clients at the food pantry ways to use some of the product available, such as venison and various other items. Bob and Mrs. Moon decided to reconnect in the fall, which they did, and then set up the date.
The Restaurant Management class prepared a few desserts with items found at the pantry, and put together a packet of recipes for the clients to take with them, which included many of the food items available. The students, Sam Heim, Irving Lopez, and Donald Tepper, from Galena High School cooked two dishes that afternoon, while Mrs. Moon spoke to some of the clients and shared ideas on budget friendly, and healthy meals. The students prepared ground beef and venison stew, which could be made on the stovetop or in the crockpot, and a sausage black bean soup.
Bob and Mrs. Moon felt the afternoon was a success, and set a date for the spring to present to another group at the food pantry, using spring and summer recipes. The students enjoyed the opportunity to cook for a group, and the clients enjoyed the chance to try a couple of different recipes.
